I was invited by Zipkick and Salt7 in Delray Beach, Florida for a special wine dinner. Chef Paul Niedermann, Hell’s Kitchen winner, was cooking up a storm. It was a beautiful Florida evening with good people, food, and wine. I was honored to be able to taste the menu and experience a wonderful dining experience fit for a king and queen. First we were served a welcome cocktail which was super strong and tasty. Once we got seated, we were served large fortune cookies will with an edible menu! That’s right, edible! made from rice paper. First you had to break the large fortune cookie open, which was also edible. The night started with a musician playing an electric violin which was magical!

Kampachi Tartar


This was a refreshing appetizer. I loved the explosion of flavors and the crunch from the endive. This had the perfect amount of tang and sweetness from the Asian Pear. There are also bell pepper, ponzu, and micro cilantro in it.

Spring Pea Risotto


This was my favorite of the night. I love the creamy texture and the goat cheese with aborio rice. There’s mint and crispy shallots which tied this dish together perfectly.

Olive Oil Poached Shrimp


So delicate, so tasty, so refreshing! If you love shrimp, you will love this dish. It had roasted garlic, Fresno chili, red onion, and lemon. It reminded me of a ceviche!

Iberico Pork Loin


I’ve never had pork so tender. That blueberry gastrique had the perfect amount of sweetness. The fava bean ragout and cippolini onion adding the texture and flavor needed to bring out the essences of the pork meat.

Banana Polenta Cake


At last, dessert! I was actually pretty stuffed by this point but this dessert was probably the best I’ve tasted. It wasn’t overly sweet and I loved the cold olive oil ice cream and the warm brulee banana topped off with balsamic dark chocolate and candied pecans.
